* 1 Tbsp. olive oil
* 2 Tbsp. minced fresh garlic
* 2 Tbsp. minced fresh gingerroot
* 1 c. diced pineapple
* 1-1/2 c. (8 oz.) cooked jasmine or glutinous rice
* 2 Tbsp. sesame oil
* 1/2 c. California raisins
* 2 Tbsp. light soy sauce
* 2 Tbsp. chopped fresh chives
1. Heat medium-large wok or non-stick pan until hot.
2. Add olive oil, garlic and gingerroot, stirring constantly. Next, add pineapple and sauté lightly. Then, stir in cooked rice, sesame oil, raisins and soy sauce; sauté until lightly crisp. Keep warm until ready to serve sprinkled with chopped chives.
