Apple Cinnamon Muffins (Gluten-Free)

Ingredients
** 1 1/2 c. Gluten-Free Flour Blend
1/2 c. brown sugar
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. xanthan gum ( check your store's Natural Foods section)
1/4 tsp. salt
1/4 c. melted butter (or applesauce)
2 eggs
1/2 c. milk (or milk substitiute)
1 apple, peeled and diced

** Gluten-Free Flour Blend ingredients:
6 cups Brown or White Rice Flour
2 cups Potato Starch
1 cup Tapioca Flour
(whisk ingredients together, store room temp)

** For 1 1/2 cup gluten-free flour blend:
1/2 cup rice flour
1/2 cup cornstarch
1/2 cup tapioca starch/flour
1 Tbsp potato flour

Directions:

1. Combine flour blend, sugar, baking powder, cinnamon, xanthan and salt in a bowl.

2. In a large bowl, mix eggs, butter, (or applesauce), milk, and diced apple.

3. Stir in dry ingredients.

4. Spoon into oil sprayed muffin pan. Bake at 350° for 40-45 min. or until a toothpick inserted in the center comes out clean.
