Tex-Mex Meatballs and Rice

Ingredients
PAM® Original No-Stick Cooking Spray
1 lb. lean ground beef (93% lean)
1/4 c. seasoned dry breadcrumbs
1/4 c. grated Parmesan cheese
1/4 c. EGG BEATERS® Original
2 cans (8-oz.ea.) RO*TEL® Mild Tomato & Green Chili Sauce
1 can (10-oz. ea.) RO*TEL® Mild Diced Tomatoes & Green Chilies, drained
3 c. hot cooked brown rice

Directions:

1. Preheat oven to 400°F. Spray 13x9-in. glass baking dish with PAM® cooking spray; set aside.

2. Combine beef, bread crumbs, Parmesan cheese and EGG BEATERS® in large bowl. Divide meat mixture evenly into 18 portions; roll gently and place in baking dish. Bake 15 min. or until meatballs are cooked through (160°F).

3. Combine RO*TEL® tomato sauce and drained RO*TEL® tomatoes in microwave-safe bowl; cover. Microwave on HIGH 2 min.; keep warm. Just before serving, stir 1 c. RO*TEL® sauce mixture into cooked rice. Serve meatballs and remaining RO*TEL® sauce over rice.

Cook's tips: Sprinkle with shredded cheese, if desired. Try this recipe with RO*TEL® Original Tomato & Green Chili Sauce in place of the mild version for more flavor. One fresh egg may be used in place of 1/4 c. EGG BEATERS®.
